Cooking BBQ can seem intimidating. With a few simple steps or ideas, you can put together a great meal for your family and friends to enjoy. Use these recipes to find ways to kick up your meal or to use some leftovers to make something new!

 

Smoked BBQ Crackers

Follow this simple recipe to create your own version of this delicious snack!

Ingredients:

  • 1 full-size box of saltines (4 sleeves)

  • 1 cup olive oil

  • 1/4 cup ranch dressing mix (3 packets)

  • 1/4 cup Spivey-Q BBQ Rub (Classic or Cajun Sunrise)

  • 1 -gallon zip-top plastic bag

  • 1 foil pan

Recipe Steps:

  1. Preheat your oven or smoker to 225 degrees. If using a smoker, add some wood chips or chunks.

  2. Add oil, ranch, and Spivey-Q BBQ seasoning to the zip-top bag. Seal the top and mix thoroughly (shake and turn for 2-3 minutes)

  3. Reopen the bag and add the crackers.

  4. Seal the bag and gently turn to evenly coat the crackers. Be careful! Try not to break any of the crackers.

  5. Once the crackers are evenly coated, carefully transfer them to the foil pan, stacking them on edge so they all fit and can bake/smoke evenly.

  6. Bake/smoke the crackers for 2 hours. If smoking, use smoke for the first hour (wood chunks on part of the coals). Over-smoking the crackers may cause a bitter taste.

  7. Remove and let them cool. Enjoy!

Jalapeno Poppers

Ingredients

12 medium-to-large jalapeno peppers

1 Cup of chopped, cooked brisket

1 Cup Pimento Cheese

6-8 slices of bacon

24 toothpicks

Preparation

  1. Preheat your oven to 425 degrees. Halve (lengthwise) and seed the peppers. Trim off the stems, but try to leave a little curve to the top (this will help hold in the goodness).

  2. On a foil-lines baking sheet, spread out the peppers, insides facing up.

  3. Finely dice or chop the brisket so it can easily fit into the pepper halves. Divide the brisket into the peppers. Don’t over-fill them as you will be adding more ingredients.

  4. Top the brisket with the pimento cheese and spread it over the top of the pepper half to fully cover.

  5. Cut the bacon strips in half and wrap on piece around each filled pepper half.

  6. Secure the bacon with the toothpick by sticking it through the pepper, stuffing, and bacon, making sure both ends of the bacon are run through.

  7. Put the peppers in the over on the middle rack and bake until the bacon is starting to get crispy. This should take 20-30 minutes. If the cheese starts to ooze out, it’s getting done. Move the pan to the top rack and broil until the bacon is done.

  8. Remove from the oven and let stand until they are cool enough to remove the toothpicks. It’s best to count them as you take them out so you don’t end up with a guest inadvertently picking their teeth!

Serving

This will be the hardest part - getting them onto a serving plate before they get eaten! These are great hot or room-temp, so make them ahead and warm them in the oven if you want to eat them later.

BBQ Pizza

This is a simple one. Find your favorite pizza recipe. Substitute Spivey-Q Sweet BBQ Sauce for the tomato sauce (or base) and finely chop pulled pork and substitute it for any of the meat toppings.

After cooking, drizzle some more sauce over the top of the pizza, and you are ready to eat!

Salad Dressing

You may not think of BBQ sauce as a great addition to a bowl full of green stuff, but it can jazz up your salad with an extra kick that will keep you eating healthy (or healthier).

Ingredients

Equal parts of ranch dressing and Spivey-Q Sweet BBQ Sauce

Water

Preparation and Instructions

In a small bowl combine the dressing and sauce. Drizzle in water and whisk or stir until it reaches the consistency you desire. You may omit the water completely if the initial consistency it suitable.

Serving

Toss the dressing in with your salad or leave it on the side and let your guests serve themselves.

Smoked Salmon

This is one of my favorite and simplest recipes.

Ingredients

1 Salmon Filet (skin on) - I like to get these at Sam’s Club or Costco, but any grocery store should have these on hand.

1/4 Cup Spivey-Q BBQ Rub

Preparation and Instructions

  1. Preheat your oven, grill, or smoker to 250 degrees. If you are smoking this recipe, use a lighter wood like hickory, maple, or any fruit wood (cherry, apple, pecan). Oak is OK too, just avoid mesquite as it will be too heavy of a flavor for this delicate fish.

  2. Check the salmon filet for pin bones and remove as necessary.

  3. Lightly sprinkle the BBQ rub over the filet. For your first attempt, be more conservative and work your way up to more to taste. The filet should be completely covered, but you should still be able to see the meat.

  4. Cook the filet until it reaches an internal temp of 130-140 degrees. The cooing time may vary, so use a probe thermometer to keep an eye on the temp as you cook. This should take 45-60 minutes. There may be “white stuff” oozing out of the filet. That’s just the protein leaving the muscles. It’s harmless, You can dab it off with a paper towel or a soft brush.

  5. Remove the filet and serve.

Serving

There are several ways to serve this dish and it’s good hot or cold.

If serving hot, slice into 2-inch portions, plate, and devour.

If serving cold, refrigerate overnight and crumble it over a salad, or substitute it in for your favorite tuna salad recipe.
